Jang Kalguksu
Korean noodle soup with savory soybean paste broth.
Ingredients:
- 12 oz (340g) Korean wheat noodles
- 4 tablespoons doenjang (soybean paste)
- 2 medium zucchini, sliced
- 2 medium potatoes, cubed
- 1 large onion, sliced
- 4 cloves garlic, minced
- 10 dried anchovies
- 1 piece (4 inches) kelp
- 4 green onions, chopped
- 1-2 red chili peppers, sliced
- 6 cups (1.4L) water
