Korean noodle soup with savory soybean paste broth.

Ingredients:

  • 12 oz (340g) Korean wheat noodles
  • 4 tablespoons doenjang (soybean paste)
  • 2 medium zucchini, sliced
  • 2 medium potatoes, cubed
  • 1 large onion, sliced
  • 4 cloves garlic, minced
  • 10 dried anchovies
  • 1 piece (4 inches) kelp
  • 4 green onions, chopped
  • 1-2 red chili peppers, sliced
  • 6 cups (1.4L) water
