Green Borscht

Traditional green borscht with sorrel and vegetables.

Ingredients:

  • 2 cups (100g) fresh sorrel
  • 3 medium potatoes, cubed
  • 2 medium carrots, diced
  • 1 large onion, chopped
  • 4 large eggs, hard-boiled
  • 6 cups (1.4L) beef or vegetable broth
  • 2 bay leaves
  • 1/4 cup (8g) fresh dill, chopped
  • 1 cup (240ml) sour cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
